Crispy Potato Tacos
A easy Potato Taco (Taco de papa) recipe for all the potato lovers to enjoy. We grew up making it and satisfying our own family during special holidays and events. We are now passing it on for you and your family to enjoy.

Ingredients
- 3 russet potatoes
- 10 corn tortillas
- 1 head of lettuce
- 1 can of El Pato hot tomato sauce
- 1/3 cup of milk
- 1 teaspoon salt
- 1 teaspoon black ground pepper
- 1 bag of Mexican blend cheese
- cooking oil
Directions
Step 1
Peel and dice potatoes into cubes. Then place into boiling water.
Step 2
While potatoes are boiling, shred your lettuce.
Step 3
After the potatoes are ready, drain them and add salt, pepper, milk, and 1/2 cup Mexican cheese. Mash together until creamy and smooth. Season to taste. Set aside.
Step 4
In large skillet heat 1 inch cooking oil over medium high heat.
Step 5
Wrap a stack of 5 tortillas in a damp towel. Microwave for 30-45 seconds, just until they are soft and pliable.
Step 6
On each tortilla add about 2 tablespoons of filling on one side of the tortilla and fold them to create tacos.
Step 7
Fry each taco in oil for about 2 minutes per side.
Step 8
stuff each taco with shredded lettuce and top with cheese and El Pato Hot tomato sauce.
